Belgian style waffles are great, in my opinion, for weekend breakfasts. Instead of syrup I opt for a bit of lightly sweetened, freshly whipped cream and plenty of fruit.
Here’s how I make them:
First, I take out the waffle iron and brush on a little bit of canola oil, then plug it in and let it warm up.
While its warming, I make the batter:
In a bowl I mix 2 cups of flour, a 1/2 tsp of baking soda, 1 tsp baking powder, 1 tsp salt and 3 tblsp of sugar. In another bowl I mix 3 eggs, 4 tablespoons of melted butter and 2 cups buttermilk. (If you don’t have buttermilk, I’ve successfully used one cup regular milk and one cup cream or half and half).
Once the liquids and the solids have been mixed respectively, I mix the two together and I let it sit for a few minutes, while I prepare the whipped cream and slice the fruit.
Once you’re ready to make the waffles just follow the instructions that came with your waffle iron.
This makes about 6-7 waffles in my iron, you can definitely cut the recipe in half to make enough for two people, which is what I usually do.
